If your oven is broken, or you don’t want to put it on just for some potatoes, then I have the solution.

Cook them on the stove instead.

Yes, it is possible to get your potatoes nice and crispy without roasting them in an oven!

I love this pan-fried method because for one, you can roast them without an oven, and two, you don’t need to do any parboiling. So, it’s actually quicker than using your oven.

How to slow cook roast potatoes

As well as stove cooking, you can also slow cook your roast potatoes.

I had no idea this was possible until I learned about it here.

If you have time to spare, it turns out slow-cooking is a fantastic way to roast your potatoes.

Here’s how:

  1. Cut your peeled potatoes into medium chunks.
  2. Boil for 10 minutes.
  3. Strain off the water and let the potatoes dry.
  4. Meanwhile, set the slow cooker to high and add some olive oil.
  5. When the oil is hot, toss your potatoes in it.
  6. Place a tea-towel under the slow-cooker lid*.
  7. Cook on high for four hours, turning the potatoes twice during cooking so that they crisp up evenly.

*The tea towel helps the potatoes to crisp up.

Ingredients

  • 4-5 medium-sized waxy potatoes, skins on.
  • Two of tablespoons of mild olive oil.
  • Kosher or coarse salt.

Method

  1. Cut the potatoes into quarters.
  2. Coat the bottom of a thick-bottomed frying pan or skillet with oil and heat it until it starts to smoulder a little.
  3. Sprinkle a layer of salt over the oil.
  4. Place the potatoes, cut-side down, in the oil.
  5. Cook on medium heat for 10-12 minutes, or until nicely browned underneath.
  6. Turn the heat down to low and cover the pan.
  7. Cook for a further 20 minutes, or until cooked through.
